Ingredients:
- 3 pounds chicken drumsticks
- 2 tablespoons BBQ spice rub
- 2 1/2 cups BBQ sauce (divided use)
- Cooking spray
Instructions:
- Prep the Slow Cooker: Coat the inside of a slow cooker really well with cooking spray.
- Season Chicken: Rub the BBQ spice all over the drumsticks.
- Layer & Sauce: Place the drumsticks in the slow cooker in layers. Pour 2 cups of BBQ sauce into the slow cooker. Gently toss to coat the drumsticks.
- Slow Cook: Cover and cook on low for 5-6 hours or on high for 3-4 hours. The chicken should be very tender.
- Preheat Broiler: When the chicken is almost done, preheat your broiler.
- Broil for Crispness: Carefully remove the cooked chicken drumsticks from the slow cooker and place them in a single layer on a sheet pan coated with cooking spray.
- Final Sauce & Crisp: Brush the remaining 1/2 cup BBQ sauce over the drumsticks. Broil for 3-5 minutes, watching carefully, or until the edges are starting to brown and getting crispy.
- Serve: Serve immediately and enjoy your perfectly tender, crispy BBQ chicken!
Notes from My Kitchen:
- Keep the Skin On! Seriously, leave the skin on your drumsticks. It helps tremendously in keeping the meat incredibly moist and tender during the long cooking process.
- Broiler Watch: Watch your chicken like a hawk under the broiler! It can go from perfectly crisp to burnt in seconds. You want just the edges to start browning and getting crispy.
- Serving Suggestions: This chicken is fantastic served with a side of mash potatoes, cream style corn, green beans, roasted potatoes, or a simple green salad.
I hope this Slow Cooker BBQ Chicken becomes a new favorite in your home too! It’s proof that you can have a comforting, delicious meal without the weekday stress.
