Zesty Italian Chicken Sheet Pan Dinner (One-Pan Meal!)

Happy Foodie Friday! I saw this amazing Zesty Italian Chicken Sheet Pan Dinner from the wonderful @TheBarefootNeighbor on TikTok and knew I had to make it immediately. It did not disappoint! If you’re looking for a recipe that delivers maximum flavor with minimal cleanup, you have come to the right place. Meet my new favorite weeknight hero: the Zesty Italian Chicken Sheet Pan Dinner.
This is a true one-pan wonder. We’re talking juicy, marinated chicken breasts, tender roasted potatoes, and crisp green beans all cooked together on a single pan. The secret is a double-dose of flavor from a zesty Italian dressing marinade and a buttery, lemon-herb coating for the veggies.
It’s the kind of comforting, complete meal that tastes like you spent hours on it, but it comes together so quickly. It’s my go-to for a fancy-feeling Friday dinner without the fuss. Let’s get cooking!
Why You’ll Love This Recipe:
- Incredible Flavor: Zesty, savory, and packed with Italian herbs.
- One-Pan Cleanup: The beauty of a sheet pan dinner!
- A Complete Meal: Protein, starch, and a green veggie all in one.
- Perfect for Busy Nights: A simple prep process for a delicious result.
Ingredients:
- 2 lbs boneless, skinless chicken breasts or tenders
- 1 bottle of your favorite Italian dressing (I used Kraft Zesty Italian)
- 1 lb baby potatoes (or “little potatoes”), quartered
- 1 (12 oz) bag fresh green beans, trimmed
- 1 packet (0.7 oz) Zesty Italian seasoning mix
- 3 tbsp butter, melted
- 2 tbsp olive oil
- 1 fresh lemon
- Italian seasoning blend (for sprinkling)
Instructions:
- Marinate the Chicken: About an hour before you plan to cook, place your chicken in a bowl or zip-top bag and pour about half the bottle of Italian dressing over it. Make sure it’s well-coated and let it marinate in the fridge. Note: If you don’t have time to marinate the chicken or forget like I did the last time, you can let it marinate while getting the veggies ready.
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare the Veggie Coating: In a large bowl, whisk together the melted butter, olive oil, the dry Zesty Italian seasoning packet, and the juice from your squeezed lemon. “
- Coat the Veggies: Add your quartered potatoes and trimmed green beans to the bowl with the butter mixture. Toss everything together until the veggies are completely and beautifully coated. “
- Assemble the Pan: Spread the coated potatoes and green beans onto a large, rimmed sheet pan in an even layer. Leave enough space in the middle or to one side for the chicken. “
- Add the Chicken: Remove the chicken from the marinade and place it on the empty section of the sheet pan. You can pour a little of the leftover marinade from the bowl right on top of the chicken for extra flavor. “
- Final Seasoning: Sprinkle a generous amount of the Italian dry seasoning blend over everything on the pan—the chicken and the veggies. As I always say, season with love!
- Bake: Place the sheet pan in the preheated oven and bake for 30-45 minutes. The dinner is done when the chicken is cooked through and the potatoes are tender enough to be easily pierced with a fork.
Let it rest for a few minutes before serving. Enjoy your delicious and easy one-pan meal!
