Easy Veggie Beef Soup Recipe

There’s nothing quite like the feeling of coming home from a big trip. You’re happy to be in your own bed, but also… that post-vacation “thud” back to reality is real!

We got back, and instead of sunshine, we were greeted with cold, dreary, rainy weather. I was exhausted, my suitcase was still mocking me from the corner, and the last thing I wanted was a complicated meal.

I wanted a warm hug in a bowl. So, I made the one thing that always hits the spot: a big, hearty pot of Veggie Beef Soup. It’s the ultimate comfort food for a reason. It’s incredibly easy to make, it’s warm and filling, and (this is the best part) it makes a ton of leftovers. That means I could cook once and have a delicious, no-effort meal ready for the next couple of days. That is a post-vacation win.

This is my go-to “welcome home” meal for a cold day. I hope you love it as much as I do.

RECIPE: Veggie Beef Soup

This recipe is my favorite because it’s so forgiving. You can use whatever veggies you have in the freezer or pantry. It’s all about low effort and high comfort!

INGREDIENTS:

  • 64 oz. Tomato Juice
  • 2 pounds beef stew
  • 1 sweet onion
  • 2 cans diced potatoes
  • 2 cans whole kernal corn
  • 2 cans peas and carrots mixed

INSTRUCTIONS:

  1. Add your tomato juice to your soup pot.
  2. Next, cut up your beef stew meat into smaller pieces and add to pot.
  3. Cook on medium heat for 45 minutes, stirring occasionally.
  4. After, your stew mixture is ready, add your diced potatoes to the pot. Then cook for another 20 minutes, stirring occasionally. You can use fresh or can potatoes. I just prefer the canned as it makes it easier for me.
  5. Next, add your cans of corn and peas and carrots to the pot. You will cook this for 15-20 minutes, stirring occasionally.
  6. Lastly, serve up with crackers and add a sandwich if desired.
